Spring Rolls

Ingredients

 

  • 16 Rice cakes (see preparation on the package)
  • 3 oz (80g) of uncooked rice vermicelli
  • 1 Sliced carrot
  • 1/2 cup of finely choped Boston lettuce
  •  Fresh coriander at taste
  • 1 teaspoon of lemon zest
  •  3/4 cup of Cooked chicken or turkey pieces
  • Cooked shrimps (optional) 
  • 1/4 cup of dried cranberries
  • Commercial peanut sauce

Preparation

 

  1. Prepare the rice cakes as indicated on the package.
  2. Cook the noodles as indicated
  3. Put the ingredients to your taste inside and roll.
  4. Serve cold with peanut sauce.
